Shrimp, Crab and Parmesean Stuffed Portobello Mushrooms

Ingredients:
4 Alaskan King Crab Legs
2 Portabello Mushrooms
1/2 Cup Parmesan Cheese
10 Extra Large Shrimp (enough for 2 servings depending on the size of your shrimp)
Safflower Oil for Drizzling
Directions:
1. Bring a pot of water to a boil
2. Reduce heat slightly and simmer the king crab legs for 5-7 minutes
3. Remove crab legs from pot and set aside to cool
4. Thaw shrimp, remove tails and cut into bite size pieces
5. Crack crab legs, shred meat with hands, and place in a bowl
6. In a bowl, combine the shrimp, crab and parmesan cheese
7. Drizzle safflower oil on mushroom caps and spoon the seafood and cheese mixture onto the mushroom caps as well

8. Place mushrooms on an aluminum foil lined cookie sheet and broil for 5-10 minutes until cheese has browned
9. Place on dish and enjoy!
