  1. In a large bowl, combine the yogurt, lemon juice, 1 teaspoon (tsp) garam masala, 1 teaspoon (tsp) cumin, 1 teaspoon (tsp) paprika, turmeric and 1/2 teaspoon (tsp) salt. Add the chicken and stir until evenly coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  2. Heat the oil and 1 tablespoon (tbsp) butter in a large deep skillet or Dutch oven over medium-high heat. Add the chicken in a single layer, working in batches if needed, and cook for about 6 to 8 minutes, turning occasionally, until browned on the outside. Transfer the chicken to a plate; it does not need to be fully cooked yet.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon (tbsp) butter and the onion. Cook for about 5 to 6 minutes, stirring often, until softened and lightly golden.
  4. Add the garlic and ginger and cook for about 30 seconds. Stir in the tomato paste, remaining 1 teaspoon (tsp) garam masala, coriander, 1/2 teaspoon (tsp) cumin and 1/2 teaspoon (tsp) paprika. Cook for 1 minute, stirring, until fragrant.
  5. Pour in the tomato sauce and stir well, scraping up any browned bits from the bottom of the pan.
  6. Bring the sauce to a gentle simmer and cook for about 8 minutes, stirring occasionally, until slightly thickened.
  7. Return the chicken and any juices to the pan. Simmer gently for about 8 to 10 minutes, stirring occasionally, until the largest pieces reach 165°F in the center.
  8. Reduce the heat to low. Stir in the heavy cream, sugar and remaining 1/2 teaspoon (tsp) salt. Warm for 2 to 3 minutes without boiling. Taste and add more salt if needed, then scatter over the cilantro and serve.
