  1. Pat the chicken dry. If any cutlet is thicker than 1/2 inch, place it between sheets of plastic wrap or parchment paper and pound it gently to an even thickness.
  2. Combine the flour, salt and black pepper in a shallow dish. Coat each chicken cutlet lightly on both sides and shake off the excess flour.
  3. Heat 1 tablespoon (tbsp) olive oil and 1 tablespoon (tbsp) butter in a 12-inch skillet over medium-high heat. Add half the chicken and cook for about 3 minutes per side, until golden. Transfer to a plate. Repeat with the remaining 1 tablespoon (tbsp) olive oil, 1 tablespoon (tbsp) butter and chicken.
  4. Reduce the heat to medium. Add the mushrooms and cook for about 5 to 7 minutes, stirring occasionally, until they release their moisture and begin to brown.
  5. Add the shallot and cook for about 2 minutes, until softened. Add the garlic and cook for about 30 seconds, just until fragrant.
  6. Pour in the Marsala wine and scrape up the browned bits from the bottom of the skillet. Simmer for about 3 to 4 minutes, until the wine has reduced by roughly half.
  7. Add the chicken broth and simmer for about 2 minutes. Return the chicken and any accumulated juices to the skillet. Simmer gently for about 3 to 5 minutes, turning once, until the thickest part of the chicken reaches 165°F and the sauce lightly coats a spoon.
  8. Remove the skillet from the heat. Swirl in the remaining 1 tablespoon (tbsp) butter, then stir in the parsley. Spoon the mushrooms and Marsala sauce over the chicken and serve immediately.
