  1. Heat the oven to 350°F. Lightly grease a 9 by 5-inch loaf pan or line it with parchment paper.
  2. Heat the olive oil in a small skillet over medium heat. Cook the onion for about 5 to 6 minutes, until softened but not browned. Add the garlic and cook for about 30 seconds. Remove from the heat and let the mixture cool slightly.
  3. In a large bowl, combine the panko breadcrumbs and milk. Leave them for about 5 minutes so the breadcrumbs can absorb the milk.

  6. For the glaze, stir together 1/3 US cup ketchup, brown sugar, 1 teaspoon (tsp) Worcestershire sauce and 1 teaspoon (tsp) Dijon mustard. Spread the glaze evenly over the meatloaf.
  7. Bake for about 50 to 60 minutes. Start checking near 50 minutes and continue cooking until the center reaches 160°F on a food thermometer.
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before lifting it from the pan and slicing.
