Heat the oven to 375°F. Lightly grease a 9 by 13-inch baking dish.

Put the bacon in a large skillet over medium heat and cook for about 6 to 8 minutes, stirring occasionally, until browned and crisp. Transfer the bacon to a plate with a slotted spoon, leaving about 1 tablespoon (tbsp) of rendered fat in the skillet.

Add the ground bison and onion to the skillet. Cook for about 7 to 9 minutes, breaking the meat into small crumbles, until the onion is soft and the bison reaches 160°F. Stir in the garlic and cook for about 30 seconds. Spoon off excess fat if needed.

Stir in the tomato paste, crushed tomatoes, oregano, black pepper, fine salt and cooked bacon. Simmer uncovered for 10 to 12 minutes, stirring occasionally, until the filling is thick enough to mound slightly on a spoon. Remove from the heat.

Whisk the eggs, milk and 1/4 teaspoon (tsp) fine salt in a medium bowl. Heat a 10-inch nonstick skillet over medium-low heat and brush it lightly with some of the olive oil. Add about 1/3 US cup egg mixture and tilt the skillet to form a thin round. Cook until almost set, about 1 to 2 minutes, turn carefully, then cook for about 30 seconds more. Repeat to make 6 egg sheets, adding the remaining oil as needed.

Stir the ricotta with half of the Parmesan until evenly combined.

Spread about 1 US cup of the bison and bacon filling over the bottom of the baking dish. Arrange 2 egg sheets over it, overlapping them slightly so they cover most of the dish. Dollop half of the ricotta mixture over the egg, then sprinkle with about 1/4 of the mozzarella.

Add 2 more egg sheets, half of the remaining bison filling, the rest of the ricotta mixture and another 1/4 of the mozzarella. Top with the final 2 egg sheets, the remaining bison filling, the remaining mozzarella and the remaining Parmesan.

Cover the dish loosely with foil and bake for 20 minutes. Uncover and bake for another 10 to 15 minutes, until the cheese is bubbling and the center reaches 165°F on a food thermometer.

Remove from the oven and rest for 10 minutes before cutting into 8 portions.
