  1. Heat the oven to 425°F. Line an 18 by 13-inch rimmed sheet pan with aluminum foil. Pat the chicken thighs very dry with paper towels, then coat them with the olive oil, salt, 1 teaspoon (tsp) smoked paprika, 1/2 teaspoon (tsp) garlic powder, 1/2 teaspoon (tsp) onion powder and black pepper.
  2. Arrange the chicken skin-side up on the prepared pan with a little space between the pieces. Bake for 25 minutes without sauce so the skin can begin to brown and the chicken can cook before the sugary glaze is added.
  3. While the chicken bakes, whisk together the ketchup, brown sugar, apple cider vinegar, molasses, remaining 1/2 teaspoon (tsp) smoked paprika, remaining 1/2 teaspoon (tsp) garlic powder and remaining 1/2 teaspoon (tsp) onion powder. Divide the sauce between two clean bowls so the second portion stays separate from the brush used on partially cooked chicken.
  4. After 25 minutes, brush the chicken generously with the first portion of barbecue sauce. Return it to the oven for 10 minutes.
  5. Brush the chicken with the clean second portion of sauce and bake for another 8 to 12 minutes. Check the thickest part of every thigh with a food thermometer, without touching the bone, and continue cooking until each piece reaches at least 165°F.
  6. Remove the chicken from the oven and let it rest for 5 minutes before serving. The glaze will thicken slightly as it stands.
