Method

  1. Grate the cucumber on the large holes of a box grater. Put it in a fine-mesh sieve, sprinkle lightly with a pinch of the measured salt and leave it to drain for about 10 minutes.
  2. Transfer the grated cucumber to a clean kitchen towel or cheesecloth. Gather the towel around it and squeeze firmly over the sink to remove as much liquid as possible.
  3. In a medium bowl, stir together the Greek yogurt, squeezed cucumber, garlic, olive oil, lemon juice, dill, remaining salt and black pepper until evenly combined.
  4. Taste and add a little more salt or lemon juice if needed. For the best texture and flavor, cover and refrigerate for at least 15 minutes before serving, or serve immediately if preferred.
  5. Stir once more before serving. Keep chilled until needed.
