WHY IT WORKS

Why This Recipe Works

01

Keep the Toast Crisp

Deeply toasted sourdough gives the avocado a sturdy base and helps the finished toast stay crisp instead of turning soft straight away.

02

Season the Avocado

A little lemon juice and salt brighten the avocado without overwhelming its creamy flavor.

03

Cover the Eggs

Covering the skillet helps the tops of the eggs cook evenly while the bottoms fry gently in a small amount of olive oil.

  1. Toast the sourdough until deep golden and crisp, then place one slice on each serving plate.
  2. Halve and pit the avocado. Scoop the flesh into a small bowl, add the lemon juice and half of the salt, then mash with a fork until creamy but still slightly chunky. Divide the avocado between the toast slices and spread it to the edges.
  3. Heat the olive oil in a 10-inch nonstick skillet over medium-low heat. Crack in the eggs, cover the pan and cook for about 4 minutes. Continue cooking if needed until both the whites and yolks are firm.
  4. Place one fried egg on each avocado toast. Sprinkle with the red pepper flakes, black pepper and remaining salt, then serve immediately.

COOKING GUIDANCE

Practical Cooking Notes

Make Ahead

The toast and eggs are best cooked just before serving. The avocado can be mashed with the lemon juice up to 1 hour ahead; press plastic wrap directly onto the surface, refrigerate it, then stir before using.

Recipe Notes

Ingredient Notes

Choose an avocado that yields slightly to gentle pressure but is not mushy. Plain sourdough gives the toast plenty of structure, while lemon juice adds brightness and helps slow surface browning.

Useful Substitutions

Whole-grain bread can replace the sourdough, and fresh lime juice can replace the lemon. Aleppo pepper can replace the red pepper flakes for a milder, fruitier heat.

INGREDIENT QUALITY

Quality Note

Use an avocado that yields slightly to gentle pressure but is not deeply dented or mushy. Toast the bread before mashing the avocado so the toast stays crisp when assembled.

SPEND LESS

Cost-Saving Tip

Sourdough that is a day past its freshest is still excellent once toasted, making this a useful way to use bread that might otherwise go to waste.

COOKING TIPS

Tips

Toast the Bread Well

Take the sourdough to a deep golden color so it stays crisp underneath the avocado and egg.

Season the Avocado

Mash the avocado until creamy but still slightly chunky. A little texture makes the topping feel more substantial and helps it sit neatly on the toast.

Use Gentle Heat

Keep the skillet over medium-low heat so the eggs cook steadily without the undersides becoming tough or overly browned.

Add Chili to Taste

Red pepper flakes vary in heat. Start with the stated amount, then add more at the table if you want a stronger kick.

MAKE IT LAST

Storing, Freezing & Reheating

Storing

Avocado toast is best eaten immediately. If needed, refrigerate leftover mashed avocado in a small airtight container with plastic wrap pressed directly onto the surface and use it within 1 day.

Freezing

Do not freeze assembled avocado toast. The bread softens and the cooked egg and avocado lose their best texture after thawing.

Reheating Eggs

If you have a cooked egg left over, refrigerate it promptly and reheat it thoroughly before serving. Re-toast the bread separately, then add fresh or chilled avocado.

Best Served Fresh

Once assembled, the toast softens quickly. For the best texture, keep the bread, avocado and eggs separate until you are ready to eat.

QUESTIONS

Avocado Toast FAQs

How do I choose a ripe avocado for avocado toast?

Look for an avocado that yields slightly when gently pressed but does not feel soft or sunken. If it is still firm, leave it at room temperature until ripe.

Can I make avocado toast ahead of time?

The assembled toast is best made just before eating. You can mash the avocado with lemon juice up to 1 hour ahead, cover its surface closely and refrigerate it until needed.

How do I keep mashed avocado from turning brown?

Lemon juice slows browning, but air exposure still matters. Press plastic wrap directly against the mashed avocado and keep it refrigerated until you assemble the toast.

Can I use a different bread?

Yes. Whole-grain, seeded or another sturdy bread can work well. Toast it thoroughly so it can support the avocado and egg without becoming soggy.

How spicy is this avocado toast?

The stated red pepper flakes give a noticeable but moderate heat. Use less for a milder breakfast or add more after serving if you prefer it hotter.
