  1. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. Cut each avocado in half and remove the pit. Peel away the skin, then cut each half lengthwise into 3 wedges so you have about 18 avocado fries.
  3. Put the flour in the first shallow bowl and the beaten eggs in the second. In the third bowl, combine the panko breadcrumbs, smoked paprika, garlic powder, salt and black pepper.
  4. Working with one avocado wedge at a time, coat it lightly in flour and shake off the excess. Dip it in the egg, let the excess drip away, then press it gently into the seasoned panko until coated on all sides.
  5. Arrange the breaded wedges in a single layer on the prepared baking sheet with a little space between them. Lightly brush the tops and exposed sides with the olive oil.
  6. Bake for 12 to 15 minutes, rotating the baking sheet after about 7 minutes, until the coating is golden and crisp. Serve immediately.
