  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until just tender, starting to check them around 8 minutes. Drain well and keep warm.
  2. Pat the beef dry and season it with 1/2 teaspoon (tsp) of the salt and the black pepper. Heat 1 teaspoon (tsp) of the olive oil in a 12-inch skillet over medium-high heat. Sear half the beef in a single layer for about 1 to 2 minutes per side, just until browned. Transfer it to a plate, add the remaining 1 teaspoon (tsp) oil and repeat with the remaining beef.
  3. Reduce the heat to medium. Add the butter, mushrooms and onion to the skillet and cook for about 6 to 8 minutes, stirring occasionally, until the mushrooms are browned and the onion is soft. Add the garlic and cook for 30 seconds.
  4. Sprinkle the flour over the mushrooms and onion. Stir constantly for about 1 minute so the flour coats the vegetables and loses its raw taste.
  5. Gradually stir in the beef broth, scraping up the browned bits from the skillet. Stir in the Worcestershire sauce and Dijon mustard, then simmer for about 3 to 4 minutes, until the sauce lightly coats a spoon.
  6. Return the beef and any collected juices to the skillet. Cook for 1 to 2 minutes over low heat, just until the beef is hot and the sauce coats the strips. Remove the skillet from the heat.
  7. Let the sauce stop bubbling, then stir in the sour cream until smooth. Taste and add the remaining salt if needed. Spoon the beef stroganoff over the warm egg noodles and finish with the parsley, if using.
