  1. Heat 1 1/2 tablespoons (tbsp) of the olive oil in a large nonstick skillet over medium heat.
  2. Add the diced potatoes and 1/4 teaspoon (tsp) of the salt. Stir to coat, add 2 tablespoons (tbsp) water, then cover and cook for 6 minutes so the centers begin to soften.
  3. Remove the lid. Add the cumin, smoked paprika and black pepper, then cook for another 6 to 8 minutes, stirring occasionally, until the potatoes are tender and browned at the edges. Transfer them to a plate.
  4. Crack the eggs into a medium bowl, add the remaining 1/2 teaspoon (tsp) salt and whisk until evenly combined.
  5. Reduce the skillet to medium-low heat and add the remaining 1/2 tablespoon (tbsp) olive oil. Pour in the eggs and cook for 3 to 4 minutes, stirring slowly with a flexible spatula, until softly set but still moist.
  6. Return the potatoes to the skillet, add the green onions and fold everything together gently. Remove the skillet from the heat.
  7. Warm the tortillas one at a time in a dry skillet for about 15 to 20 seconds per side, or microwave the stack briefly under a damp paper towel, until flexible.
  8. Divide the Monterey Jack among the tortillas, placing it slightly below the center. Spoon the egg-and-potato mixture over the cheese. Fold in the sides, then roll each tortilla up firmly from the bottom to enclose the filling.
  9. Place the burritos seam-side down in the dry skillet over medium heat. Cook for about 1 to 2 minutes per side, working in batches if needed, until lightly browned and the cheese has melted. Serve hot.
