WHY IT WORKS

Why This Recipe Works

01

Creamy Without Cooking

Thick Greek yogurt and chocolate protein powder create a spoonable pudding texture without needing heat or a cooked custard.

02

Coconut in Two Forms

Coconut milk adds smooth coconut flavor through the pudding, while shredded coconut adds a little texture and a clear coconut finish.

03

A Short Chill Helps

Thirty minutes in the refrigerator gives the cocoa and protein powder time to hydrate, so the pudding becomes smoother and more cohesive.

Dietary options

Make This Recipe Work for You

Only straightforward swaps are offered automatically. If changing a defining ingredient would effectively create a different dish, that conversion is left out.

Already Vegetarian ✓
Make It Vegan

Change the following ingredients:

Replace2 US cups plain nonfat Greek yogurt

With2 US cups unsweetened plain Greek-style plant-based yogurt

Replace1/2 US cup chocolate whey protein powder

With1/2 US cup chocolate plant-based protein powder

Choose a thick unsweetened Greek-style plant-based yoghurt and add the coconut milk gradually because plant-based protein powders and yoghurts can thicken differently.

Make It Dairy-Free

Change the following ingredients:

Replace2 US cups plain nonfat Greek yogurt

With2 US cups unsweetened plain Greek-style dairy-free yogurt

Replace1/2 US cup chocolate whey protein powder

With1/2 US cup chocolate dairy-free protein powder

Use thick dairy-free alternatives so the pudding keeps its spoonable texture.

Make It Gluten-Free

Change the following ingredient:

Replace1/2 US cup chocolate whey protein powder

With1/2 US cup gluten-free chocolate whey protein powder

Protein-powder formulations vary, so choose a chocolate protein powder labelled gluten-free and check the other packaged ingredients if avoiding gluten strictly.

For allergies, intolerances or strict dietary requirements, check the labels of the specific products you use. These swaps do not certify a recipe or ingredient as allergen-free.

Recipe Notes

Ingredient Notes

Protein powders vary in sweetness, cocoa content and thickening power. A chocolate whey or whey-casein powder gives a dependable creamy result here; if yours thickens very strongly, whisk in the coconut milk gradually and stop when the pudding reaches the consistency you like.

Useful Substitutions

Plain low-fat Greek yogurt can replace nonfat Greek yogurt for a slightly richer pudding. A chocolate whey-casein blend can replace straight whey protein powder in the same weight, although it may thicken more firmly. Unsweetened desiccated coconut can replace shredded coconut if that is what you have, but the texture will be finer.

INGREDIENT QUALITY

Quality Note

Protein powder is the biggest source of texture variation in this recipe. Add the coconut milk gradually rather than automatically forcing in every drop if your powder produces a thick pudding sooner.

SPEND LESS

Cost-Saving Tip

Use the plain Greek yogurt, cocoa and protein powder you already keep on hand rather than buying a separate ready-made protein pudding product; the recipe needs only a small amount of shredded coconut for the coconut finish.

COOKING TIPS

Tips

Whisk the Base Smooth First

Combine the yogurt and coconut milk before adding the dry ingredients. This makes it easier to work the protein powder and cocoa in without leaving dry pockets.

Add the Powders Gradually

Whisk the protein powder and cocoa in a little at a time. Dumping them in all at once makes small dry lumps harder to smooth out.

Adjust Before Chilling

Protein powders thicken differently. If the mixture is already very stiff, hold back a little of the coconut milk and add only enough to make a thick but spoonable pudding.

Add the Final Coconut at Serving

Reserve half of the shredded coconut for the top so it keeps more of its texture instead of softening completely in the pudding.

MAKE IT LAST

Storing, Freezing & Reheating

Storing

Cover the pudding and refrigerate it for up to 3 days. If it thickens further as it stands, stir it well before serving.

Freezing

Freezing is not recommended because Greek yogurt can separate and turn grainy after thawing, which changes the smooth pudding texture.

QUESTIONS

Chocolate Coconut Protein Pudding FAQs

Can I use a different chocolate protein powder?

Yes. Whey, whey-casein blends and many plant-based chocolate protein powders can work, but they absorb liquid differently. Add the coconut milk gradually and adjust the final consistency before chilling.

Can I use regular yogurt instead of Greek yogurt?

You can, but regular yogurt is thinner. Start with less coconut milk and add more only if needed so the finished mixture stays thick enough to eat as pudding.

Why did my protein pudding become very thick?

Some protein powders absorb much more liquid than others, especially casein-rich blends and some plant proteins. Whisk in a small amount of the reserved coconut milk until the pudding is thick but comfortably spoonable.

Can I make chocolate coconut protein pudding ahead of time?

Yes. Prepare and portion the pudding up to 24 hours ahead, cover it and keep it refrigerated. Add the reserved shredded coconut just before serving for the best texture.
