WHY IT WORKS

Why This Recipe Works

01

Protein Without a Rubbery Texture

Whey protein is balanced with flour, Greek yogurt and enough milk to keep the pancakes tender rather than dry or dense.

02

Chocolate and Cinnamon Stay Balanced

Cocoa gives the batter a clear chocolate flavor while cinnamon adds warmth without overpowering the pancakes.

03

Resting Improves the Batter

A short rest gives the flour, cocoa and protein powder time to hydrate, which helps the batter thicken evenly before cooking.

Timed steps show a timer button beneath the instruction.

  1. In a medium bowl, whisk together the flour, whey protein powder, cocoa powder, baking powder, cinnamon and salt until evenly combined.
  2. In a large bowl, whisk the eggs, milk, Greek yogurt, maple syrup and vanilla extract until smooth.
  3. Add the dry ingredients to the wet ingredients and stir just until no dry pockets remain. Fold in the mini chocolate chips without overmixing.
  4. Let the batter rest for 5 minutes. It should be thick but spoonable; if it is too stiff to fall slowly from a spoon, stir in water 1 tablespoon (tbsp) at a time.
  5. Heat a large nonstick skillet or griddle over medium-low heat and lightly coat it with some of the oil. For each pancake, add about 1/4 US cup batter. Cook for about 2 to 3 minutes, until the edges look set and bubbles appear on the surface, then flip and cook for about 1 to 2 minutes more, until the center is set.
  6. Repeat with the remaining batter, adding the remaining oil as needed. Serve the pancakes warm.

COOKING GUIDANCE

Practical Cooking Notes

Make Ahead

The dry ingredients can be whisked together and kept in an airtight container for up to 3 days. For fully prepared pancakes, cook and cool them before refrigerating or freezing. Do not store the mixed raw batter overnight because the pancakes may lose lift.

Dietary options

Make This Recipe Work for You

Only straightforward swaps are offered automatically. If changing a defining ingredient would effectively create a different dish, that conversion is left out.

Already Vegetarian ✓
Make It Dairy-Free

Change the following ingredients:

Replace1/2 US cup vanilla whey protein powder

With1/2 US cup vanilla plant-based protein powder

Replace1 1/4 US cups 2% milk

With1 1/4 US cups unsweetened dairy-free milk

Replace1/2 US cup plain Greek yogurt

With1/2 US cup plain unsweetened dairy-free yogurt

Replace1/4 US cup mini semisweet chocolate chips

With1/4 US cup dairy-free mini semisweet chocolate chips

Use a vanilla plant protein powder, unsweetened dairy-free milk, plain dairy-free yogurt and dairy-free chocolate chips. Plant protein powders can absorb more liquid than whey, so check the batter after resting and add a little water if needed.

Make It Gluten-Free

Change the following ingredients:

Replace1 US cup all-purpose flour

With1 US cup 1-to-1 gluten-free baking flour

Replace1/2 US cup vanilla whey protein powder

With1/2 US cup gluten-free vanilla whey protein powder

Use a cup-for-cup gluten-free baking flour and a labelled gluten-free protein powder. Check the baking powder and chocolate-chip labels as well if you need to avoid gluten strictly.

For allergies, intolerances or strict dietary requirements, check the labels of the specific products you use. These swaps do not certify a recipe or ingredient as allergen-free.

Recipe Notes

Ingredient Notes

Vanilla whey protein powder works well here because it adds sweetness as well as protein. Protein powders absorb liquid differently, so judge the batter after its 5-minute rest: it should be thick but still fall slowly from a spoon. Natural or Dutch-process unsweetened cocoa powder can be used because the recipe relies on baking powder for lift.

Useful Substitutions

Skyr can replace the Greek yogurt in the same quantity. Regular semisweet chocolate chips can replace mini chips, although the chocolate will be distributed less evenly through each pancake.

INGREDIENT QUALITY

Quality Note

Protein powders vary substantially in sweetness and liquid absorption. Let the batter rest before adjusting it, and add only enough water to keep it thick but spoonable.

SPEND LESS

Cost-Saving Tip

Use the same whey protein powder you already keep for shakes rather than buying a pancake-specific protein mix, and compare larger tubs by price per ounce when that suits how quickly you use it.

COOKING TIPS

Tips

Keep the Heat Moderate

Protein-rich batters brown quickly. Medium-low heat gives the centers time to cook before the outsides become too dark.

Do Not Overmix

Stir only until the dry ingredients are incorporated. A few small lumps are fine and help keep the pancakes tender.

Let the Batter Rest

Give the mixed batter 5 minutes before cooking. If it becomes too thick to spoon easily, stir in water 1 tablespoon (tbsp) at a time.

Flip Once

Wait until the edges look set and bubbles are appearing on the surface, then flip once and cook the second side until set.

MAKE IT LAST

Storing, Freezing & Reheating

Storing

Let the pancakes cool, then refrigerate them in a covered container for up to 4 days.

Freezing

Freeze cooled pancakes in a single layer until firm, then transfer them to an airtight freezer container with baking parchment between layers. Use within about 2 months for best texture.

Reheating

Warm refrigerated or thawed pancakes in a toaster, dry skillet or microwave until hot. Reheat gently so the protein-rich pancakes do not dry out.

QUESTIONS

Cinnamon Chocolate Protein Pancakes FAQs

Why are my protein pancakes dry or rubbery?

Too much protein powder, overmixing and high heat can all make protein pancakes dry or rubbery. Use the stated proportions, mix only until combined and cook over medium-low heat.

Can I use chocolate protein powder instead of vanilla?

Yes. Chocolate whey protein powder can replace the vanilla whey protein powder in the same quantity. The pancakes will have a stronger chocolate flavor, so you may prefer to reduce the cocoa slightly only if your protein powder is very intensely flavored.

How thick should the pancake batter be?

The rested batter should be thicker than ordinary pancake batter but still spoonable. If it becomes too stiff after resting, stir in water 1 tablespoon (tbsp) at a time until it falls slowly from a spoon.

Can I make these pancakes ahead?

Yes. Cook the pancakes, cool them completely and refrigerate or freeze them. For the best rise, do not mix the raw batter the night before.

Can I leave out the chocolate chips?

Yes. The cocoa still gives the pancakes a clear chocolate flavor, so the chocolate chips can be omitted without changing the method.
