WHY IT WORKS
Why This Recipe Works
01
Brown Sugar Depth
Light brown sugar gives the filling a deeper caramel-like flavor while keeping the classic pecan pie character.
02
Balanced Filling
Eggs and corn syrup set the brown sugar filling into a glossy, sliceable layer that stays soft rather than brittle.
03
Cool Before Slicing
A full cooling period lets the filling finish setting, so the pie cuts cleanly without turning dry from extra baking.

Timed steps show a timer button beneath the instruction.
-
Heat the oven to 350°F. Set a rack in the lower third of the oven and place a rimmed baking sheet nearby.
-
Fit the unbaked pie crust into a 9-inch pie plate and crimp the edge. Set the pie plate on the rimmed baking sheet.
-
Spread the pecan halves evenly over the bottom of the crust.
-
In a large mixing bowl, whisk the eggs until evenly combined. Add the brown sugar, corn syrup, melted butter, vanilla and salt, then whisk until the filling is smooth.
-
Pour the filling evenly over the pecans. Let it settle for a minute, then gently nudge any crowded pecans so the top is reasonably even.
-
Bake for 50 to 55 minutes. Start checking near 45 minutes. If the crust edge is browning too quickly, cover the rim loosely with foil or a pie shield. The pie is ready when the center reaches about 200°F, springs back lightly when touched and moves gently rather than looking liquid.
-
Transfer the pie to a wire rack and cool for at least 2 hours before slicing. Once cooled, cover and refrigerate it if you are not serving it right away.
COOKING GUIDANCE
Practical Cooking Notes
Doneness
200°F / 93°C
Check the center near the end of baking. At about 200°F it should spring back lightly and move gently rather than look liquid. Cool for at least 2 hours before slicing so the filling can finish setting.
Make Ahead
Bake the pie up to 1 day ahead. Let it cool completely, then cover and refrigerate it. For serving, enjoy it chilled or let it stand at room temperature for about 30 minutes.

Recipe Notes
Ingredient Notes
Light brown sugar brings a mellow molasses note to the filling, while corn syrup helps keep the texture smooth and glossy. Use pecan halves for the most classic appearance, or pecan pieces if you prefer a more even nut distribution.
Useful Substitutions
Dark brown sugar can replace light brown sugar for a stronger molasses flavor. Dark corn syrup can replace light corn syrup in the same quantity for a deeper, less delicate filling.
INGREDIENT QUALITY
Quality Note
Do not keep baking simply to make the center look completely firm in the oven. Start checking near 45 minutes and remove the pie when the center is about 200°F, springs back lightly and no longer looks liquid; it will finish setting as it cools.
SPEND LESS
Cost-Saving Tip
Pecan pieces are often less expensive than perfect halves and work in the same quantity by weight. Use pieces if appearance is not important, or combine mostly pieces with a few halves for the top.
COOKING TIPS
Tips
Watch the Crust Edge
If the crust edge is already well browned after about 25 to 30 minutes, cover the rim loosely with foil or a pie shield for the rest of the bake.
Whisk Until Smooth
Whisk the eggs before adding the sugar and syrup, then mix just until the filling is smooth so no streaks of egg remain.
Check the Center
Start checking near 45 minutes. The center should reach about 200°F, spring back lightly when touched and move gently rather than slosh.
Cool Completely
Give the pie at least 2 hours on a wire rack before slicing. Cutting it while hot can make the brown sugar filling run.
MAKE IT LAST
Storing, Freezing & Reheating
Storing
Once the pie has cooled, cover and refrigerate it. Use homemade pecan pie within 3 to 4 days.
Freezing
Wrap the fully cooled pie or individual slices tightly, then place in an airtight freezer container. For best quality, use within 1 to 2 months and thaw overnight in the refrigerator.
Reheat in the Oven
Pecan pie is usually best served cool or at room temperature. If you prefer it warm, heat a slice at 300°F for about 8 to 10 minutes, just until gently warmed.
Reheat in the Microwave
Microwave one slice at 50% power in short 10 to 15-second intervals until just warm. Avoid overheating, which can make the filling overly soft.

QUESTIONS
Pecan Pie FAQs
How do I know when pecan pie is done?
Start checking near 45 minutes. The center should be about 200°F, spring back lightly when touched and move only gently when the pie plate is nudged.
Why is my pecan pie filling runny?
A runny filling is usually underbaked or sliced before it has cooled. Bake until the center is properly set, then cool the pie for at least 2 hours before cutting.
Can I use dark brown sugar instead of light brown sugar?
Yes. Use the same quantity of dark brown sugar for a deeper molasses flavor and a slightly darker filling.
Do I need to toast the pecans first?
No. This classic version uses the pecans as they are, so there is no separate toasting step before the pie goes into the oven.
Can I make pecan pie ahead of time?
Yes. Bake and cool the pie, then cover and refrigerate it overnight. Let it sit at room temperature for about 30 minutes before serving if you do not want it refrigerator-cold.
