  1. Heat the oven to 400°F. Lightly grease an 8-inch square baking dish with 1 teaspoon (tsp) of the olive oil.
  2. Slice about 1/2 inch from the top of each tomato. Scoop out the seeds and soft center, leaving the outer walls intact. Sprinkle the insides with half of the salt, then place the tomatoes cut side down on paper towels for 10 minutes.
  3. While the tomatoes drain, heat the remaining 1 teaspoon (tsp) olive oil in a medium skillet over medium heat. Add the spinach and cook for about 2 to 3 minutes, until wilted. Transfer to a plate, let it cool slightly, then squeeze out as much liquid as possible and chop it.
  4. Set the tomatoes upright in the prepared baking dish. Bake for 8 minutes, then remove the dish from the oven and carefully pour off any liquid that has collected inside the tomatoes or dish.
  5. Combine the spinach, cottage cheese, garlic powder, oregano, remaining salt and half of the black pepper. Divide the mixture among the tomatoes, keeping it around the bottom and sides so there is room for an egg in the center.
  6. Crack 1 egg into each tomato. Sprinkle with the remaining black pepper.
  7. Return the dish to the oven and bake for 16 to 20 minutes, until the egg whites and yolks are set and the tomatoes are tender but still holding their shape.
  8. Let the stuffed tomatoes stand for 2 minutes before serving.
