Method

  1. Crack the eggs into a large shallow bowl or pie plate. Add the sugar, cinnamon and salt and whisk until well combined.
  2. Whisk in the milk and vanilla extract until the custard is smooth. Whisk again briefly between batches if the cinnamon begins to collect on the surface.
  3. Heat a large skillet or griddle over medium heat. Add 1 tablespoon (tbsp) of the butter and let it melt and foam without browning.
  4. Working with 2 to 3 slices at a time, dip the bread in the custard and turn to coat both sides. Let the excess drip back into the bowl, place the bread in the hot skillet and cook the first side for about 2 to 3 minutes, until golden brown.
  5. Flip the bread and cook the second side for about 2 to 3 minutes, until golden brown and the center is set.
  6. Transfer the cooked French toast to a plate. Add the remaining butter as needed and repeat with the remaining bread, adjusting the heat if the butter starts to brown too quickly.
  7. Serve the French toast warm with the maple syrup.
