Method

Line an 8-inch square pan with parchment paper, leaving enough overhang to lift out the chilled slab.

In a large mixing bowl, stir together the rolled oats, protein powder, cocoa powder and salt until the cocoa and protein powder are evenly distributed.

In a separate bowl, stir together the almond butter, maple syrup, milk and vanilla until smooth. If the almond butter is very firm, warm it briefly just until it becomes easy to stir.

Add the wet mixture to the dry ingredients and stir firmly until no dry pockets remain. Fold in most of the chocolate chips, reserving about 1 tablespoon (tbsp) for the top. The mixture should hold together when squeezed; if it is still crumbly, mix in 1 tablespoon (tbsp) additional milk.

Transfer the mixture to the prepared pan. Press it down very firmly and evenly, paying particular attention to the corners, then scatter the reserved chocolate chips over the surface and press them in lightly.

Reserve about 1/2 ounce (oz) of the chopped dark chocolate for the top. Put the remaining dark chocolate and neutral oil in a small microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until smooth, or melt them gently in a small saucepan. Drizzle the melted chocolate over the bars, then scatter over the reserved dark chocolate pieces.

Refrigerate for at least 2 hours, until the slab feels firm throughout.

Lift the slab from the pan using the parchment paper. Cut into 12 bars with a sharp knife, wiping the blade clean between cuts if needed. Keep the bars chilled for the firmest texture.
