  1. Heat the oven to 325°F. Arrange six 4-ounce shallow ramekins in a deep roasting pan. Bring enough water to a boil to reach about halfway up the sides of the ramekins.
  2. Pour the heavy cream into a medium saucepan and heat over medium-low heat until steaming and small bubbles appear around the edge. Do not let it boil. Remove from the heat, stir in the vanilla extract and let the cream stand for 5 minutes.
  3. In a large mixing bowl, whisk the egg yolks and 1/3 US cup granulated sugar until smooth and evenly combined. Avoid whisking in lots of air.
  4. While whisking constantly, slowly pour about one-quarter of the warm cream into the yolk mixture. Continue adding the remaining cream in a steady stream until fully combined.
  5. Pour the custard through a fine-mesh sieve into a heatproof pitcher or bowl, then divide it evenly among the ramekins. Skim off any obvious foam from the surface.
  6. Carefully pour the hot water into the roasting pan until it reaches about halfway up the ramekins. Transfer the pan to the oven and bake for 30 to 35 minutes, until the edges are set but the centers still wobble gently when nudged.
  7. Lift the ramekins out of the water bath and cool for about 30 minutes. Refrigerate until thoroughly cold and set, at least 4 hours. Once cold, cover if chilling for longer.
  8. Just before serving, blot any condensation from the tops. Sprinkle about 1 teaspoon (tsp) of the topping sugar in a thin, even layer over each custard. Caramelize with a kitchen torch until amber and glassy, then let the sugar harden for about 2 minutes before serving.
