WHY IT WORKS

Why This Recipe Works

01

A Genuinely Low-Carb Base

Mozzarella, cream cheese and almond flour create a tender bread-like base without relying on a wheat loaf or a conventional flour dough.

02

Garlic in Every Bite

Garlic powder seasons the dough while fresh garlic in the butter topping gives the finished bread a stronger aromatic garlic flavor.

03

Two-Stage Baking

Baking the base before adding the garlic butter helps it set and brown at the edges without overcooking the fresh garlic.

  1. Heat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Put the mozzarella and cream cheese in a large microwave-safe bowl. Microwave for 60 seconds, stir, then heat in 20 to 30-second intervals as needed until the cheeses are melted enough to stir together smoothly.
  3. In a medium bowl, stir together the almond flour, gluten-free baking powder, garlic powder and salt. Add the dry mixture and egg to the warm cheese mixture. Mix firmly with a silicone spatula until a uniform dough forms. If the dough is very sticky, let it cool for 2 to 3 minutes.
  4. Transfer the dough to the lined baking sheet. With slightly damp fingertips, press it into an even rectangle about 9 by 7 inches and roughly 3/8 inch thick. Bake for 10 to 12 minutes, until puffed, set and lightly golden around the edges.
  5. While the base bakes, stir together the melted butter, fresh garlic and parsley.
  6. Remove the base from the oven. Brush the garlic butter evenly over the surface and sprinkle with the Parmesan. Return it to the oven for 5 to 7 minutes, until the edges are golden and the topping is hot and lightly browned.
  7. Let the garlic bread rest for 5 minutes, then cut it into 8 strips or pieces and serve warm.

Recipe Notes

Ingredient Notes

Use finely ground blanched almond flour rather than coarse almond meal for the smoothest, most bread-like texture. Low-moisture mozzarella works best because it gives the dough structure without adding excess water.

Useful Substitutions

Salted butter can replace the unsalted butter in the same quantity; reduce the dough salt to a small pinch. If fresh parsley is unavailable, use 2 teaspoons dried parsley instead.

INGREDIENT QUALITY

Quality Note

For the most consistent dough, use finely ground blanched almond flour and low-moisture mozzarella. Work the dough while the cheese is still warm, but let it cool briefly if it is too sticky to press.

SPEND LESS

Cost-Saving Tip

A block of low-moisture mozzarella is often better value than pre-shredded cheese and usually melts more smoothly. Shred only what you need and keep the rest refrigerated for another recipe.

COOKING TIPS

Tips

Melt the Cheese Gently

Heat the mozzarella and cream cheese only until they are soft enough to stir together. Overheating can make the cheese oily and harder to combine with the flour.

Mix While Warm

Add the dry ingredients and egg while the cheese mixture is still warm and pliable so the dough comes together more evenly.

Keep the Thickness Even

Press the dough to an even thickness so the center sets at the same rate that the edges brown.

Watch the Final Bake

The garlic butter can brown quickly near the end. Remove the bread once the edges are golden and the Parmesan is hot and lightly colored.

MAKE IT LAST

Storing, Freezing & Reheating

Storing

Cool leftovers completely, then refrigerate them in an airtight container for up to 4 days.

Freezing

Freeze cooled individual pieces in a single layer, then transfer them to a freezer container or bag. For best texture, use within 2 months.

Reheat in the Oven

Warm pieces on a baking sheet at 350°F for about 6 to 8 minutes, until hot and the edges have crisped again.

Reheat in the Air Fryer

Reheat individual pieces at 325°F for about 3 to 4 minutes, checking early so the cheese topping does not overbrown.

QUESTIONS

Low-Carb Garlic Bread FAQs

Is this low-carb garlic bread keto-friendly?

The recipe is made with almond flour instead of wheat flour and is low in carbohydrate per serving, so it may fit many keto-style eating plans. Individual carbohydrate targets and ingredient brands vary, so use the nutrition estimate and your own requirements as a guide.

Can I use coconut flour instead of almond flour?

Not as a direct replacement. Coconut flour absorbs much more liquid than almond flour, so a one-for-one swap would make the dough too dry and would require a different formulation.

Why is my cheese dough sticky?

The dough is naturally soft while the cheese is warm. Let it cool for 2 to 3 minutes, then press it with slightly damp fingertips rather than adding extra almond flour.

Can I make low-carb garlic bread ahead of time?

Yes. Bake the plain base, cool it completely and refrigerate it for up to 24 hours. Add the garlic butter and Parmesan just before the final bake.

Can I freeze low-carb garlic bread?

Yes. Freeze fully baked and cooled pieces, then reheat them from thawed or frozen until hot and crisp at the edges.
