Cowboy Caviar Recipe
Classic cowboy caviar with black-eyed peas, tomatoes, bell pepper, red onion, jalapeño and cilantro tossed in a bright lime-vinegar dressing.
WHY IT WORKS
Why This Recipe Works
01
Build a Crisp Base
Black-eyed peas give the salad substance while tomato, bell pepper and red onion keep every bite fresh and crisp.
02
Dress It From Scratch
Olive oil, red wine vinegar, lime, garlic and cumin make a bright dressing without relying on bottled salad dressing.
03
Keep the Flavors Balanced
A small amount of sugar softens the acidity, while jalapeño and lime keep the finished cowboy caviar lively rather than sweet.

In a large mixing bowl, combine the black-eyed peas, cherry tomatoes, red bell pepper, red onion, jalapeño and cilantro.
-
In a small bowl or jar, whisk together the olive oil, red wine vinegar, lime juice, garlic, sugar, cumin, salt and black pepper until the sugar has dissolved and the dressing is well combined.
-
Pour the dressing over the black-eyed pea mixture. Toss gently until the vegetables and peas are evenly coated without crushing the tomatoes.
-
Taste and adjust the salt or lime juice if needed. Serve right away, or cover and refrigerate for up to 30 minutes before serving. Stir gently again just before serving.
COOKING GUIDANCE
Practical Cooking Notes
Make Ahead
Prepare the cowboy caviar up to 1 day ahead and keep it covered in the refrigerator. For the freshest color, you can hold the cilantro separately and stir it in shortly before serving.

Recipe Notes
Ingredient Notes
Black-eyed peas are the defining base here. Rinse them well and let them drain before mixing so the dressing stays bright instead of becoming diluted by canning liquid.
Useful Substitutions
Green bell pepper can replace the red bell pepper for a sharper flavor, and fresh parsley can replace cilantro if preferred. For less heat, omit the jalapeño or use only half.
INGREDIENT QUALITY
Quality Note
Rinse the black-eyed peas thoroughly and let them drain well before mixing. Excess canning liquid or rinse water will dilute the dressing and make the finished salad taste flat.
SPEND LESS
Cost-Saving Tip
Cooked black-eyed peas made from dried peas can replace the canned peas. Cool and drain them thoroughly before using so the finished salad keeps the same fresh texture.
COOKING TIPS
Tips
Drain the Peas Well
After rinsing, leave the black-eyed peas in the colander for a minute or two. Excess water can thin the dressing and mute its acidity.
Dice the Vegetables Small
Keep the tomato, bell pepper and onion pieces fairly small so each spoonful gets a balanced mix rather than one dominant ingredient.
Whisk the Dressing First
Mix the dressing separately before adding it to the salad so the salt, sugar, garlic and cumin distribute evenly.
Stir Again Before Serving
The dressing settles at the bottom as the salad stands. Give the cowboy caviar a gentle stir just before serving.
MAKE IT LAST
Storing, Freezing & Reheating
Storing
Keep cowboy caviar in a covered container in the refrigerator and use it within 3 days. Stir before serving because the dressing will settle.
Make Ahead
You can assemble the salad several hours ahead. For the freshest color and texture, add the cilantro shortly before serving if practical.
Refresh Before Serving
If the salad has been chilled, let it sit for a few minutes, stir well and taste. A small squeeze of lime can brighten the dressing again if needed.
Freezing
Freezing is not recommended. The tomatoes and peppers soften after thawing and the fresh texture that makes this salad work is lost.

QUESTIONS
Cowboy Caviar FAQs
What is cowboy caviar made from?
This version uses black-eyed peas, cherry tomatoes, red bell pepper, red onion, jalapeño and cilantro with a lime and red-wine-vinegar dressing.
Can I make cowboy caviar ahead of time?
Yes. It can be assembled several hours ahead and refrigerated. Stir it well before serving, and add the cilantro closer to serving time if you want the freshest color.
Is cowboy caviar served cold?
It is usually served chilled or at cool room temperature. It also works immediately after mixing if you do not have time to refrigerate it first.
How do I keep cowboy caviar from getting watery?
Rinse and drain the black-eyed peas thoroughly, and avoid adding the liquid from the tomato bowl or colander. Stir the salad just before serving so the dressing coats the ingredients again.
What can I serve with cowboy caviar?
Serve it as a salad or side dish, or spoon it up as a dip. Tortilla chips are a common serving accompaniment, but they are not required for the recipe itself.
