WHY IT WORKS

Why This Recipe Works

01

Use a Pourable Batter

A smooth batter that falls in a steady ribbon creates connected strands without turning dense or doughy.

02

Hold the Oil at 375°F

Steady frying temperature helps the batter turn crisp and golden while limiting excess oil absorption.

03

Build the Classic Shape

A loose spiral crossed with a few ribbons of batter gives funnel cake its familiar lacy shape and crisp edges.

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder and salt.
  2. In a separate bowl or measuring jug, whisk the egg, milk and vanilla until evenly combined.
  3. Pour the wet mixture into the dry ingredients and whisk just until smooth. The batter should fall from the whisk in a steady ribbon. If it is too thick to pour easily, whisk in 1 tablespoon (tbsp) additional milk.
  4. Pour canola oil into a large heavy skillet or Dutch oven to a depth of about 1 inch. Heat over medium to medium-high heat until the oil reaches 375°F. Keep the thermometer in place and adjust the heat as needed while frying.
  5. Working with one cake at a time, pour about 1/2 US cup batter through a funnel, squeeze bottle or piping bag into the hot oil in a loose spiral, then cross back and forth over the spiral to connect the strands. Hold the funnel, bottle or piping bag a few inches above the oil to control the stream, and never lower it into the hot oil. Fry for about 1 to 1 1/2 minutes, until deep golden underneath, then carefully flip and fry for about 45 to 60 seconds on the second side.
  6. Lift the funnel cake from the oil with tongs or a spider strainer and let excess oil drain back into the pan. Transfer to a wire rack or paper towels. Let the oil return to 375°F before repeating with the remaining batter.
  7. Dust the warm funnel cakes generously with powdered sugar and serve immediately.

COOKING GUIDANCE

Practical Cooking Notes

Make Ahead

Mix the dry ingredients up to 1 day ahead and keep them covered. The wet ingredients can also be whisked and refrigerated separately. For the best lift, combine the batter shortly before frying rather than storing mixed batter for a long period.

Make It Dairy-Free

Change the following ingredient:

Replace1 US cup plus 2 tablespoons (tbsp) whole milk

With1 US cup plus 2 tablespoons (tbsp) unsweetened neutral plant milk

Use the same quantity of an unsweetened neutral plant milk; flavor, protein and browning can differ.

For allergies, intolerances or strict dietary requirements, check the labels of the specific products you use. These swaps do not certify a recipe or ingredient as allergen-free.

Recipe Notes

Ingredient Notes

All-purpose flour gives the batter enough structure to hold together in the oil, while baking powder keeps the interior light. Whole milk makes a smooth, pourable batter; add only a small splash more if needed.

Useful Substitutions

Two-percent milk can replace whole milk if that is what you have. Use a neutral non-nut frying oil with a high smoke point, such as canola or standard vegetable oil; avoid strongly flavored oils.

INGREDIENT QUALITY

Quality Note

Keep the frying oil close to 375°F. Oil that is too cool makes funnel cake greasy, while oil that is too hot can brown the outside before the center is cooked. Batter should pour in a steady ribbon rather than run like milk or drop in clumps.

SPEND LESS

Cost-Saving Tip

After frying, let the canola oil cool completely, strain it through a fine-mesh sieve and store it in a clean sealed container if you plan to reuse it for another compatible frying recipe.

COOKING TIPS

Tips

Watch the Oil Temperature

Let the oil return to 375°F before each cake. Cooler oil encourages greasiness, while overheated oil browns the outside too quickly.

Keep the Batter Flowing

The batter should pour in a continuous ribbon. If it drops in heavy clumps, whisk in a tablespoon of milk before frying.

Pour Close to the Oil

Keep the funnel or squeeze bottle only a few inches above the oil so the batter lands where you want it without splashing.

Serve While Warm

Funnel cake is crispest soon after frying. Drain briefly, dust with powdered sugar and serve before it softens.

MAKE IT LAST

Storing, Freezing & Reheating

Storing

Funnel cake is best freshly fried. Once completely cool, store leftovers in an airtight container at room temperature for up to 1 day or refrigerate for up to 2 days.

Freezing

Freeze cooled funnel cakes in a single layer until firm, then transfer them to a freezer bag with parchment between layers. For best texture, use within about 1 month.

Reheat in the Oven

Reheat on a baking sheet at 350°F for about 4 to 6 minutes, until warm and crisp again. Add fresh powdered sugar after reheating.

Reheat in the Microwave

The microwave will warm funnel cake but tends to make it soft rather than crisp. Use short 10- to 15-second intervals only if texture is not a priority.

QUESTIONS

Funnel Cake FAQs

What should funnel cake batter look like?

It should be smooth and thick enough to leave a visible ribbon, but loose enough to pour continuously through a funnel or squeeze bottle. If it drops in clumps, whisk in a small splash of milk.

Can I make funnel cake without a funnel?

Yes. A squeeze bottle, piping bag with a small opening or a sturdy zip-top bag with one corner snipped off can all create the same thin stream of batter.

Why did my funnel cake turn greasy?

The most common cause is oil that is too cool. Keep it close to 375°F and let the temperature recover between cakes so the batter crisps quickly instead of absorbing excess oil.

How do I stop funnel cake from falling apart?

Cross a few ribbons of batter over the initial spiral so the strands connect. Also avoid making the stream too thin, which can produce fragile pieces that separate when flipped.

Can I make the batter ahead of time?

For the best lift, fry the cakes soon after the wet and dry ingredients are combined. You can prepare the dry ingredients and wet ingredients separately up to a day ahead, then mix them shortly before frying.
