Pumpkin Spice Latte Recipe
A creamy homemade pumpkin spice latte made with real pumpkin, warm spices, espresso, unsweetened soy milk and stevia.
Contains: Soy
Soy milk is a major allergen. Packaged sweeteners, vanilla extracts and spice blends can vary by manufacturer, so check the labels of the products you use if you are managing allergies or strict dietary requirements.
WHY IT WORKS
Why This Recipe Works
01
Real Pumpkin Flavor
Pumpkin puree gives the latte a rounded autumn flavor and a little extra body instead of relying on spice alone.
02
Creamy Without Added Sugar
Unsweetened soy milk froths well and keeps the drink creamy, while stevia provides sweetness without adding sugar.
03
Easy at Home
The pumpkin milk heats in one small saucepan and works with either espresso or very strong brewed coffee.

Brew the espresso or very strong coffee and pour it into a 12-ounce mug.
-
Add the soy milk, pumpkin puree, stevia, vanilla extract, pumpkin pie spice and salt to a small saucepan. Whisk over medium-low heat for about 3 to 4 minutes, until smooth and steaming but not boiling.
-
Remove the saucepan from the heat. Froth the pumpkin milk for about 15 to 30 seconds, if desired, until a light foam forms.
-
Pour the hot pumpkin milk over the coffee, spoon the foam over the top and finish with the ground cinnamon. Taste and add a little more stevia if needed.

Dietary options
Make This Recipe Work for You
Only straightforward swaps are offered automatically. If changing a defining ingredient would effectively create a different dish, that conversion is left out.
For allergies, intolerances or strict dietary requirements, check the labels of the specific products you use. These swaps do not certify a recipe or ingredient as allergen-free.
Recipe Notes
Ingredient Notes
Use plain pumpkin puree rather than pumpkin pie filling. Pumpkin pie spice blends vary, so taste the finished latte before adding extra spice. Powdered stevia sweeteners also vary in strength; start with the stated amount or less if your product is highly concentrated.
Useful Substitutions
Very strong brewed coffee can replace the espresso in the same quantity. Unsweetened almond milk or dairy milk can replace the soy milk, although the flavor, nutrition, allergens and dietary classifications will change.
INGREDIENT QUALITY
Quality Note
Use plain pumpkin puree, not pumpkin pie filling. Pie filling contains added sweetener and spices and would change both the flavor and the carbohydrate content of the finished latte.
SPEND LESS
Cost-Saving Tip
Use very strong brewed coffee instead of espresso if you do not have an espresso machine; it gives the drink a clear coffee flavor without extra equipment.
COOKING TIPS
Tips
Keep the Heat Gentle
Warm the pumpkin milk until steaming but do not let it boil. Gentle heat keeps the soy milk smoother and the pumpkin mixture easier to froth.
Whisk Before Frothing
Whisk the pumpkin puree and spices thoroughly into the milk before using a frother so the foam is even rather than speckled with clumps.
Adjust the Sweetness Last
Stevia products differ in strength. Taste after the coffee and pumpkin milk are combined, then add a little more only if needed.
Use Strong Coffee
If you are not using espresso, brew the coffee stronger than you would for drinking on its own so its flavor still comes through the milk and pumpkin.
MAKE IT LAST
Storing, Freezing & Reheating
Storing
For the best texture, drink the latte fresh. If needed, cool leftovers promptly, cover and refrigerate for up to 2 days.
Reheating
Reheat gently in a small saucepan or in short microwave intervals until hot, then whisk or froth again before serving. Do not boil.

QUESTIONS
Pumpkin Spice Latte FAQs
Can I make a pumpkin spice latte without an espresso machine?
Yes. Use 2 fluid ounces of very strong brewed coffee instead of espresso. A concentrated coffee keeps the coffee flavor noticeable after the pumpkin milk is added.
Does this pumpkin spice latte contain real pumpkin?
Yes. The recipe uses pumpkin puree for flavor and body. Use plain puree rather than sweetened pumpkin pie filling.
Can I use a different milk?
Yes. Unsweetened almond milk or dairy milk can replace the soy milk in the same amount, but the flavor, nutrition, allergens and dietary classifications will change.
Why does pumpkin settle at the bottom of my latte?
A little settling is normal because pumpkin puree contains solids. Whisk the mixture well while heating, froth it before serving and give the drink a quick stir if it sits for several minutes.
Can I prepare the pumpkin milk ahead of time?
Yes. Mix the soy milk, pumpkin, stevia, vanilla, pumpkin pie spice and salt, then refrigerate it covered for up to 2 days. Whisk again before heating and add freshly brewed coffee when serving.
